Quinoa topped with sautéed spinach, onions and chickpeas with a big scoop of scallion hummus. I sautéed the chickpeas in vegetable broth, tomato paste and used tapioca flour to make the sauce thicker. I also used garlic powder, turmeric, paprika and cracked black pepper. SO GOOD. And so happy to be eating mostly plant based 🙌🏻
