Besides ordering the usual non-vegetarian fares at a restaurant, a great “Egg Curry” is something that always has my heart; served with some hot rice, it feels like home. 
It was a fascinating experience to watch @ranveer.brar prepare this amazing “Punjabi Egg Curry” and throw a lot of insight into the history of Egg curry in general!

Een lekkere curry met mango en basmati-rijst.

Snel op tafel, maar heel erg smaakvol.
Zoet en pittig doet het goed. 
INGREDIËNTEN:

Kipfilet ( 400 gr ...)
2 uien
2 knoflook 
Klein zakje doperwten ( versvak #jumbo)
Klein zakje sperzieboontjes (   
1 puntpaprika 
1 rode peper 
200ml kokosmelk 
Paar eetl rode curry 
Koriander
Mango 
Basmati rijst

Optioneel:
Naanbrood 
Dip van Griekse yoghurt,  koriander, knoflook en zeezout. •Basmati rijst volgens bereidingswijze. •Sperziebonen en doperwten even 5 min voorkoken •Ui, knoflook ,rode peper en paprika snijden •Kipfilet in stukjes,  ik koop ook vaak gesneden kipfilet...... •Ondertussen wat olijfolie in een hapjespan en de kipfilet aanbakken, daarna de uien  knoflook ,rode peper en paprika erbij. •Daarna de sperziebonen en doperwten erbij •Voeg de kokosmelk toe en roer door .
•En daarna 3 eetl rode curry ( als je later meer pit wil nog wat toevoegen) •Alles even zachtjes laten pruttelen en ondertussen de mango schillen en in stukjes snijden. Ook vast paar takjes  koriander snijden. •Doe de mango erbij ,maar zeker niet te lang mee laten pruttelen •Rijst en curry in een schaal en doe er wat koriander over. 
Lekker met Naanbrood en een knoflook -koriander dip 👌

Zonder vlees ook super lekker, er zit genoeg vulling/groentein deze curry
Garnalen zou ook heel goed kunnen.
Eet smakelijk 👌

In 2 days it will be 6 months of being called Behind the Menu instead of Anna 😂 but in all  reality I figured it was time to do 𝘴𝘰𝘮𝘦 sort of introductory post. Like, 𝙬𝙝𝙮 𝙖𝙢 𝙄 𝙝𝙚𝙧𝙚? ⁣⁣

To answer that question would require a little bit of history. ⁣⁣

I first fell in love with the restaurant industry when I began working at @texasroadhouse - I actually spent FOUR years working at TRH starting at age 15 and loved every part of it from the food to the service. ⁣⁣

⁣⁣
After quite the tenure with TRH I helped open Gallerie Bar & Bistro in the Hilton Downtown Columbus. The place wasn’t even built yet and we did all our training in the convention center! It was a wild ride, but furthered my passion for this industry. ⁣⁣

⁣⁣
I clearly couldn’t get enough and simultaneously worked in catering for @cmpe_columbus all throughout college.⁣⁣

⁣⁣
This food and hospitality journey eventually led me to Northstar (also Third & Hollywood and Brassica!) where I spent 6 years learning and doing literally every job in the business. From⁣⁣
training and development to line cook to schedule writing to kitchen manager. I definitely feel like I’ve in some way worked and experienced almost every corner of the industry. ⁣⁣

Coupled with working in the industry my passion was sparked during food centric (solo!) trips to other countries including an unforgettable culinary trip to Nicaragua.⁣⁣

So, 𝙬𝙝𝙮 𝙖𝙢 𝙄 𝙝𝙚𝙧𝙚? Two reasons really.  One being, I have endless love and respect for this industry. Behind the scenes are people who are sacrificing mass amounts of time with family, friends, children, and personal to come together and provide their community with incredible experiences, food, and hospitality... Have you ever tried savory oatmeal before? Ive never been a big fan of eating sweet breakfast so I usually end up making something savory. Think of savory oats as an alternative to a quick stir fry, quick, easy and perfect for busy weeknights. I keep my pantry stocked up with @bobsredmill oatmeal so savory oats are always an option. Here is my quick 10 minute savory masala oats recipe. 
VEGAN SAVORY MASALA OATS 
1/2 cup oats 
1 cup water 
1/2 tsp vegetable bouillon 
1/4 cup frozen peas
1/4 cup sliced red onion
1 thai chilli 
1 tbsp ghee (coconut oil for vegan) 
1/4 tsp salt 
1/4 tsp turmeric
1/4 tsp ground cumin 
1/4 tsp garam masala 
1 tbsp green raisins 
1 tbsp pine nuts or walnuts 
In a medium saucepan, combine the water, 1/2 tsp ghee or coconut oil, vegetable bouillon and oats. Cook on med-low heat for about 5 minutes and set aside. 
In the meantime, add ghee or coconut oil to a skillet and melt on medium heat. Add onions, thai chilli and peas. Cook for about 3 minutes stirring occasionally or until onions soften up. Then add salt, cumin, turmeric and garam masala, mix well. Then add your cooked oats amd raisins to this mixture in the skillet. Turn heat down to low and continue to mix. Top off with pine nuts or walnuts and fresh cilantro.
