I don’t make salads that often, but when I do, you already know they’re fucking phenomenal. Emily aka @spoonfulofdelights issued a salad challenge in her recent post and y’all know I had to step up!
I believe the key to any great salad is: having various textures, flavors, and it has to be good enough to be both served standalone and also act as a side piece if need be. A bad bitch and a side hoe if you will. 😂😂
I’ll be having both this now for lunch and later for dinner with my filet mignon which I plan to make a red wine blackberry reduction to act as the bridge between the two dishes. Stay tuned on my Stories!!
Step 1 ( #Vinaigrette): Add a couple handfuls of #blackberries to a sauce pan with a bit of water and sugar/sweetener. Bring to a low boil and add in a little white wine vinegar. Turn off the heat and strain. Mix in olive oil and balsamic.
Step 2 ( #Walnuts): Soak a handful of walnuts in sugar water for 15 minutes, then bring it to a boil. Simmer down until you get a light syrupy coating.
Step 3 ( #Assemble): Add in diced cranberries, cubed cooked chicken, diced apple, tortilla strips, fresh blackberries, cranberry chèvre, and your candied walnuts to the greens of your choosing and mix thoroughly. Serve with your blackberry vinaigrette.
